The Covered or Arcade market at St Nicholas Market had a variety of food stalls, including meat. The butcher's stall here in the 1950s has meat hanging from hooks, with festoons of sausages, or laid out on enamel trays. Of the three staff, one may have been there just to take the money: those handling the food did not usually also handle the money.
